I just made angel food cake for the first time and used 20 egg whites. I figured that it would be a high protein cake, but the recipe said there is only 2 grams of protein per serving. Any ideas?

I rarely binge, but when I do the next day I eat nothing but protein; egg whites for breakfast, tuna for lunch, chicken for dinner. I was just wondering what your rectification plan was, and if there is a better way to do it!

For example using acetone how would I know that the proteins have denaturated? Or is it just that when the proteins have denaturated, the egg-white turns solid?

And also, are there other substances than acetone that would denaturate the proteins in egg-white?
