It depends! Chicken is most often marketed as the healthier alternative to red meat, pound for pound, turkey may be the better choice for the diet conscious! Any Suggestions here?

Whatever liquid you use, will help with moisture! The reasoning behind what kind of liquid to use is all about flavor! Water is too bland, so chicken stock is better to use and tastier! You can also use vegetable stock, or even apple juice! When you first place the turkey in the pan, this is the time to add the liquid! When you baste, use the dripping that have developed in the pan, *not* the stock by itself (too runny)! By using the pan juices, you are esentially using the stock (or apple juice) AND the natural oils from the turket to baste = more flavor!Steve
